Ethos & Ingredients

Ryan's ethos is to produce honest, humble food, “time to retire the tweezers”.

I take great pride in the close relationships built working with independently-run local small businesses which allows me use use local & sustainable ingredients to create a unique dining experience with an emphasis on British classics, using modern cookery.

We are committed to sourcing the finest in free range naturally reared meat from Sussex and nearby counties. We work with small farms who raise native and rare breeds. 

Being meat lovers we want all the things you want in your meat. Working with small farms who place animal welfare at the heart of what we do.

Unlike many butcher these days we work with the whole carcass. Using traditional methods our expert butchers break down whole beasts meaning we can offer any cut you desire.

Harry and Sam started Shrub in 2020, during the COVID-19 Pandemic.
Prior to Shrub, they had worked in high pressure professional kitchens, organic permaculture farms and food-chain logistics. In their time working within these industries, they identified the desire from fellow chefs to get as close to their food as possible. Equally, small, new and emerging organic farms were in need of a larger, more economically viable market to sell from.

For more than 40 years, Neal’s Yard Dairy has been home to those cheeses made in Britain and Ireland that we believe to be the very best. Some are 'territorial' cheeses that have been produced in the same way for centuries, reflecting the unique climate and culture of their home region: Cheshire, Lancashire, Caerphilly, Red Leicester and many more. Others channel the tastes and inventiveness of their makers, often taking inspiration from the cheesemaking traditions of other parts of Europe.

𝑻𝒆𝒎𝒑𝒆𝒓.𝐓𝐀𝐍𝐓𝐑𝐔𝐌 Chocolates was melted into existence in 2020, and we’ve been delighting customers ever since. 
All of our products are vegan friendly, delicious, and made to order with impeccable quality standards.
Every day, we welcome chocolate lovers, plant-based and carnivores alike, to experience 𝑻𝒆𝒎𝒑𝒆𝒓.𝐓𝐀𝐍𝐓𝐑𝐔𝐌 Chocolates for themselves.

It all began in 2002. I found that I enjoyed baking, and loved the creative process involved in decorating a cake. The skills and techniques I learned over the years gave me the confidence to work as a commercial cake artist in the industry. Jacob´s Cakes was established in 2014 as a result of my continuing passion for cake and art.

Boho Gelato is an independent producer of award winning artisan Italian style ice cream & sorbet in Brighton since 2010. Seb Cole and his team use locally produced milk & cream and the best quality ingredients from around the world to create our ever changing line up from over 500 flavours.

Boho also specialise in next level vegan gelato and have been listed in the top ten ice creams in the UK! We now have two Brighton locations as well as shops in Worthing with all ice cream being made daily in house.
